Get Cookin’ – Cajun Chicken Flat Breads

A perfect morning, afternoon or evening to me, is one spent around a table full of beautiful food & people. I love how food brings people together :).
The other evening after a little master chef session (yes I have succeeded in getting Chris to watch Masterchef with me :) )... We decided to have a little razzle in the kitchen, and this is what happened.
Easy Peasy Cajun Chicken Flat Breads, #credstochris
For the flat bread you will need:
- 2 Cups Self Raising Flour
- 1 Cup Plain, Greek Yoghurt
What to do:
- Mix the flour and yogurt into a dough
- Separate into 8 small balls
- Roll out each ball into a flat circle (about 3mm thick)
- Heat a frying pan (no oil) for about 5 mins
- Once its nice and hot, add one flat bread, once it begins to bubble, turn it over and cook the other side
- Place aside and continue with the other 7
For the Cajun Chicken, You will need
- 4 Chicken Breasts
- Cajun Spice (amount depends on your taste completely)
- Cayenne Pepper (a sprinkle is good)
- Juice and Zest of one lemon
- Glug of Olive Oil
What to do
- Mix all the above in a dish
- Heat a frying pan, seal off the chicken breasts
- Put directly in the over at 200 C for 10 mins
- Rest for a few mins, season and slice
- Serve with cucumber ribbons, rocket, tomato slices, avo and a garlic or mustard mayo :) #delish
